To steal a phrase from [livejournal.com profile] mamadeb, I am parallel-processing woman tonight.

Tonight I made:
- honey chicken for tomorrow night
- barbeque chicken for Shabbat
- gefilte fish
- "pineapple" kugel (except I didn't have pineapple so I used mandarins instead), recipe via [livejournal.com profile] cahwyguy
- three honey cakes
- two dozen hard-boiled eggs (don't need 'em until Yom Kippur break-fast, but as long as I was cooking anyway...)
- tonight's dinner (baked fish and roasted corn)

Not bad for two hours' work. (Well, plus baking time at the end, but I didn't have to participate.)

I made stewed veggies Sunday, and I'll make salads at the last minute. I might roast some veggies for Shabbat; today's visit to the farmer's market resulted in some good options there. And I have fruit, of course, including the obligatory apples and honey.

Yup, I think I'm just about ready culinarily.

Let us know how the recipe comes out. We've never tried it with mandarins before.

Any chance you'll share the honey chicken recipe? After the holy days, if not now? :)

My goodness you're productive. I'm lucky if I can throw together one night's dinner in two hours if I'm cooking from scratch.

We haven't even started thinking about tomorrow night's dinner. I think we have some chicken breasts in the fridge. I'll probably throw something together when I get home before we go to services (we have late services, at 8:45 )

Wow, you're on top of things, food wise!

I made a sweet kugel tonight, and a bean salad during my lunch break (helps to work from home before a holiday).

The "Sweet" Kugel has pineapple, apples, and apricots, but is non-dairy. Tomorrow I need to make Tzimmis, buy a bunch more challahs, get some grape juice and other drinks, and get stuff for a salad. Oh, and make a kugel for Shabbat. Oh, and buy and make chicken.

And decide what, if anything, to do with the zucchini that was left over from last Friday's farmers market. It's still good...

And clean my place at some point.

But first I need to go to sleep, or I'll be a zombie tomorrow...

We'll probably do my famous honey-mustard chicken, which is an easy dish. In a skillet pan (for which you have a good heavy lid, like a scanpan), brown some onions (finely chopped) and garlic. Throw in the chicken to brown. Once brown, spoon dijon mustard onto the chicken and top with honey. Pour over about ¼ to ½ cup of white wine, immediately cover and turn down the heat to low. After about 20 min, turn the chicken. After 20 minutes, turn again. Thicken the sauce, as necessary, with cornstarch. Serve over rice.

[Yet another new icon. Stop me before I create again!]

I was thinking about the tomato sauce option. The thing that I didn't make clear is that this is just one, medium-sized zucchini. Zucchina? So I wasn't sure if it was worth it just for a little bit o' food.

Although now that I've gotten a bit of sleep, I'm thinking that there's nothing to prevent me from buying more, so that it is worth it...

The Kugel recipe is easy for me to give you; it's already in electronic format. My commentary is in ()s, because I'm feeling too lazy to play with tags. The recipe itself is pretty simple, at least for me, because I've done it alot.

1 lb cooked broad egg noodles (extra-broad is fine too)
1/4 lb margarine (1/8th lb also works)
2 cups peeled apple, cut up.
1 number 2 can crushed pineapple & juice
1 cup apricots, cut up (I usually use canned apricots, although dried apricots will work also.)
3 eggs, beaten
3/4 cup sugar (I usually use between 1/4 and 1/2 cup)

Combine all ingredients. Bake at 350 degrees for about 1 1/2 hours or less. (If you put the pineapple into the baking pan first, then put the cut apple in with it, the pineapple juice will prevent the apple from getting brown. And it helps if you add the hot noodles last so you can distribute the margarine evenly while mixing.)

What's nice is that basic way of chicken works with almost any non-dairy based salad dressing. Simply use the dressing instead of the honey and mustard.

> "Zucchini" is one of those words that looks like it's already plural, isn't it?

It *is*. Singular is "zucchino" but nobody ever uses it, because zukes never come in quantities of just one. Remember, for another week it is still unsafe to leave your car doors unlocked out in the country. ;->
