One of my favorite bean salads: low-fat, flavorful, high protein.
3 cups torn arugula leaves (baby works better than adult arugula – less bitter) 1/2 cup chopped roasted red peppers (can use fresh if desired) 1 16-oz can navy beans, rinsed and drained 1-1/2 tablespoons balsamic vinegar 1 tablespoon olive oil 1 teaspoon honey 1/4 teaspoon salt 1/2 teaspoon black pepper garlic powder to taste
Mix the dressing. Add it to the beans and peppers. Toss with the arugula and serve.
